JOHN’S PEANUT BUTTER, POPCORN AND CHOCOLATE FUDGE TORTE

Christmas is undoubtedly a time of indulgence, or rather overindulgence. This torte is not only a feast for the stomach with its layers of soft cake, sweet mousse and decadent fudge, but because of those defined layers, also a feast for the eyes; perfect for a Christmas Eve treat.

SERVES 12–16

YOU WILL NEED: A 23CM ROUND SPRINGFORM CAKE TIN, BASE ONLY GREASED AND LINED

For the genoise cake

5 large eggs

140g caster sugar

120g plain flour

40g cocoa powder

50g butter, melted and cooled

For the peanut butter and popcorn filling

75g toffee popcorn

200ml double cream

90g sweetened, smooth peanut butter

50g condensed milk

100g mascarpone cheese

For the chocolate fudge topping

250g condensed milk

50g smooth, sweetened peanut butter

50ml double cream

200g dark chocolate, around 35–40% cocoa solids, broken into pieces

For the caramelised popcorn and to finish

100g caster sugar

50g toffee popcorn

cocoa powder, for dusting
